Chevre A L'Hoice D'Olive(Goat Cheese Marinated In Olive Oil And Herbs) - cooking recipe

Ingredients
    1 log semi-soft goat cheese (Montrachet is the easiest to find in Philadelphia)
    2 cloves garlic, peeled and halved
    about 10 peppercorns, slightly crushed
    1 tsp. herbes de provence (available in any good specialty food store like Chef's Market)
    approximately 1 c. best quality extra virgin olive oil
Preparation
    Cut cheese into 1-inch disks and put in a wide mouth jar that holds about 2 cups.
    The French \"workers glasses\" that come with orange or blue plastic lids are particularly nice to use and are available in many stores.
