Microwave Cashew Chicken - cooking recipe

Ingredients
    1 lb. chicken breast
    3 Tbsp. oil
    garlic, finely chopped (to taste)
    2 Tbsp. soy sauce
    1 Tbsp. cooking sherry (optional)
    1 Tbsp. cornstarch
    1/4 tsp. ginger
    1 green pepper or broccoli (approximately 1 c.)
    1/2 c. cashew halves
Preparation
    Heat oil in 3-quart casserole on High for 2 to 3 minutes. Combine chicken, garlic, soy sauce, sherry, cornstarch and ginger. Put ingredients in oil and cook on High 4 to 5 minutes.
    Stir twice during the 4 to 5 minutes.
    Add green pepper (broccoli) and cashews.
    Cook, covered with plastic wrap, on High 3 to 5 minutes or until chicken and vegetables are tender.
    Stir and let stand 3 minutes before serving.
    Serve with favorite brand of rice.
