Seafood Kabobs - cooking recipe

Ingredients
    1 to 2 red peppers, depending on size
    1 to 2 green peppers, depending on size
    1 large onion
    2 tomatoes
    2 swordfish steaks
    16 medium size shrimp
    16 scallops
    1/2 c. olive oil
    2 cloves garlic, chopped
    fresh parsley
    salt and pepper to taste
Preparation
    Cut all vegetables into 2-inch chunks.
    Peel and devein shrimp. Cut swordfish into 2-inch chunks.
    Alternate vegetables and fish on 4 skewers.
    Marinate in olive oil, garlic and fresh parsley for 1 hour.
    Broil for 10 minutes.
    Remove skewers, keeping shape.
    Serve over Saffron Rice.
