Ingredients
    2 Tbsp. olive or vegetable oil
    1 c. each: sliced onions, shredded zucchini and shredded carrots
    1 small garlic clove, minced
    1 1/2 c. cooked spiral macaroni
    1 Tbsp. chopped fresh parsley
    2 tsp. balsamic or red wine vinegar
Preparation
    In a 9-inch skillet, heat the oil.
    Add onions, zucchini, carrots and garlic; cook over medium heat until onions are tender.
