"Bread And Circus" Rice - cooking recipe

Ingredients
    2 c. uncooked brown rice
    1 c. cashews (unsalted)
    1 c. red pepper, chopped
    1 c. raisins, soaked in water for 20 minutes
    1 c. celery, chopped
    1 bunch parsley, chopped
    1/3 c. teriyaki or soy sauce
    1 c. dried apricots, soaked in water for 20 minutes, then chopped
    1/3 c. olive oil
    1 tsp. dry mustard
    1 Tbsp. curry (I use mild)
    1 bunch scallions, chopped
    1 Tbsp. nutmeg
    dash of cinnamon
Preparation
    Cook rice according to instructions.
    Cool.
    In large bowl, place cooled rice.
    Pour teriyaki over rice.
    Toss lightly.
    Add cashews, red peppers, raisins, scallions, apricots, celery and parsley; toss lightly.
    In a small saucepan, heat oil.
    Add dry mustard, curry, nutmeg and cinnamon.
    Whisk until blended.
    Cool. Whisk again and pour over ingredients in bowl.
    Toss lightly; cool and enjoy.
