Shrimp Or Chicken Gumbo - cooking recipe

Ingredients
    6 boneless chicken breasts or 1 to 2 lb. peeled shrimp
    1 medium bell pepper, chopped fine
    1 medium onion, chopped fine
    1/2 c. celery, chopped fine
    1 pkg. frozen okra, sliced
    1/2 c. Wesson oil
    1 c. flour
    3 tsp. salt
    1 tsp. pepper
    1 clove garlic
Preparation
    Heat heavy 4-quart aluminum or cast-iron pot.
    Then add cold oil to hot pan (so food won't stick).
    Stir in flour with wooden or metal spoon.
    (Do not use plastic or Teflon this gets so hot it will melt them.)
    Stir, stir, stir.
    Do not leave unattended. Brown to the color of milk chocolate; then add all chopped veggies and stir several minutes.
    Then add garlic salt and pepper.
    Add water a little at a time to consistency of gravy (not too thin). Add chicken; cook 1 to 1 1/2 hours until chicken or shrimp is done.
