Corned Beef With Apricot Glaze - cooking recipe

Ingredients
    3 to 4 lb. packaged corned beef brisket
    1 Tbsp. pickling spices
    1 medium onion, finely chopped
    1 (8 oz.) jar apricot preserves
    3/4 c. golden raisins
    2 Tbsp. lemon juice
    1/2 tsp. ground ginger
    1/8 tsp. salt
Preparation
    Place corned beef in Dutch oven and cover with water.
    Add pickling spices.
    Heat to boiling and reduce heat.
    Cover and simmer for 3 hours.
    Turn off heat and cool beef at room temperature for 1 hour.
    Place beef in a shallow baking pan.
