Zucchini Casserole - cooking recipe

Ingredients
    1 (8 oz.) pkg. Petridge herb stuffing
    1 stick margarine
    6 c. sliced zucchini
    1/2 c. onion (to taste)
    1 c. grated carrot
    1 c. sour cream or low-fat sour cream
    1 can cream of chicken soup
Preparation
    Boil zucchini and onion in a small amount of water for 5 minutes. Meanwhile, mix carrot, sour cream and cream of chicken soup. Drain zucchini and fold into carrot mixture.
    Melt 1 stick margarine; add herb stuffing mix, then mix.
    Layer a casserole dish with 1/2 stuffing mix; add zucchini mixture and top with remaining stuffing. Bake in 350\u00b0 oven for 20 minutes.
