Cheese Souffle - cooking recipe
Ingredients

4 Tbsp. margarine
4 Tbsp. flour
1 c. milk
1 c. grated Cheddar cheese
1 tsp. salt
dash of cayenne pepper
4 egg yolks, beaten slightly
5 egg whites, beaten stiff
Preparation

Melt margarine and stir in flour smoothly.
Add milk and stir until thickened.
Stir in the cheese and cook, stirring constantly, until cheese is melted.
Add seasonings.
Cool slightly.
Beat in egg yolks.
Fold in egg whites.
Pour into greased 1 1/2-quart souffle dish.
Bake in a 375\u00b0 oven until souffle is puffed and brown (30 to 35 minutes).
Serve at once. Serves 4.
