Morning Mix-Up - cooking recipe

Ingredients
    2 c. frozen hash browns
    1 c. chopped fully cooked ham
    1/2 c. chopped onion
    2 Tbsp. cooking oil
    6 eggs
    salt and pepper to taste
    1 c. (4 oz.) shredded Cheddar cheese
    minced fresh chives (optional)
Preparation
    In a large skillet, saute potatoes, ham and onion for 10 minutes or until potatoes are tender.
    In a small bowl, beat eggs, salt and pepper.
    Add to the skillet; cook, stirring occasionally, until eggs are set.
    Remove from heat and gently stir in the cheese.
    Spoon onto a serving platter.
    Sprinkle with chives.
    You may use your own hash brown potatoes.
    Yield:
    4 servings.
