Rainbow Stew - cooking recipe
Ingredients

2 c. dry pinto beans
2 c. cream of mushroom soup, divided
2 lb. roast, cut in parts
1 (10 oz.) can tomatoes with green chilies
1 (4 oz.) can chopped green chilies
1 tsp. cumin
1 tsp. garlic powder
1/2 tsp. oregano
rice (optional)
flour tortillas (optional)
Preparation

Spray large crock-pot with cooking spray.
Put pinto beans into pot and cover with water. Add 1 can of soup, roast, second can of soup, tomatoes, green chilies, cumin, garlic and oregano. Cook on low heat 16 to 20 hours. Serve with rice and tortillas, if desired.
Makes 8 servings.
