Ingredients

1 egg white
3/4 c. granulated sugar
1/4 c. margarine, softened
2 Tbsp. water
2 tsp. vanilla extract
1 large egg
3/4 c. all-purpose flour
1/3 c. unsweetened cocoa powder
1/4 tsp. baking powder
1/8 tsp. salt
8 starlight mint candies, crushed finely
1 tsp. powdered sugar
Preparation

Preheat oven to 325\u00b0.
Spray an 8-inch square pan with vegetable cooking spray.
With an electric mixer, beat the egg white until soft peaks form.
Transfer to a small bowl.
Put the sugar and margarine into the mixer and beat until crumbly.
Add water, vanilla and egg.
Beat at low speed until well blended. Combine the flour, cocoa, baking powder and salt.
Add to the sugar mixture on low speed, beating just to blend.
Stir in crushed candy.
Stir half the beaten egg white into the batter.
Fold in the rest of the egg white.
Transfer the batter to the prepared pan and bake about 22 to 25 minutes or until brownies test done.
Cool on a rack.
Just before serving, sprinkle the powdered sugar over the brownies through a sieve.
