Stir-Fried Mandarin Pineapple Chicken - cooking recipe

Ingredients
    1 (14 oz.) pkg. VIP Mandarin Chinese vegetable combination
    2 Tbsp. olive oil
    12 oz. (2 c.) chicken, cubed
    8 oz. pineapple chunks
    low sodium soy sauce to taste
Preparation
    Heat oil in wok or skillet over medium-high heat.
    Add chicken; stir-fry 2 to 3 minutes.
    Add vegetables.
    Continue stir-frying 3 to 4 minutes.
    Fold in pineapple and heat thoroughly.
    Serve hot.
    (I use Hormel canned chicken, drained.)
