Glenn'S Melanzane Con Due Formaggi(Eggplant With Two Cheeses) - cooking recipe

Ingredients
    1 medium eggplant, cut into 1/2-inch slices
    1/4 c. olive oil
    1/3 c. flour
    1/2 tsp. garlic salt
    1/2 c. chopped onions
    1/3 c. chopped green pepper
    1/2 c. or 1 small can mushrooms
    1 (15 oz.) can tomato sauce
    1 tsp. freshly chopped or dried parsley
    2 fresh tomatoes, chopped
    1/3 c. roasted peanuts (optional)
    1/3 c. freshly grated Parmesan cheese
    1/2 tsp. dried oregano
    8 oz. Mozzarella cheese, shredded
Preparation
    Liberally salt both sides of eggplant slices and let drain for 15 minutes.
    Wash salt off and pat dry.
    Mix flour and garlic salt and use to coat eggplant slices.
