Candied Citrus Peel - cooking recipe

Ingredients
    large grapefruit
    2 large oranges
    2 lemons
    1 1/2 c. sugar
    3/4 c. water
Preparation
    Score the fruit with sharp knife into lengthwise sections. Remove from fruit; leave on white pith.
    Place in saucepan; cover with water and bring to boil.
    Remove from heat; let stand 10 minutes and drain.
    Repeat process 3 times.
    Cool and cut peel into 1/8 to 1/4-inch wide strips.
    Put sugar and water in saucepan; bring to a boil.
    Add peel; cook over medium heat 20 to 25 minutes, until peel is translucent.
    Drain; cool and roll in sugar.
    Dry on racks 48 hours.
    Store in airtight containers.
