Smothered Chicken - cooking recipe
Ingredients

1 medium chicken, cut into 4 pieces and skinned (2 leg and thighs and 2 half-breast pieces; save back and wings for stock)
1/4 c. safflower oil
1 large onion, sliced
2 cloves garlic, minced
black pepper to taste
1/2 tsp. crushed thyme
approximately 2 c. water
1 1/2 c. sliced carrots
1 1/2 c. fresh green peas (preferably fresh)
Preparation

In deep saucepan or Dutch oven, brown chicken parts in oil. Pour off excess oil; add onion, garlic and spices.
Cover chicken with water.
Cover pot and bring to a boil, then lower heat and simmer for approximately 2 1/2 to 3 hours.
Add carrots and peas. Cover pot; bring back to a boil.
Then lower the heat and simmer for another 20 to 30 minutes.
Makes 4 servings.
