Fettuccine Florentine - cooking recipe

Ingredients
    1 (10 oz.) pack frozen spinach
    3 Tbsp. olive oil
    1 medium onion, sliced
    1 (16 oz.) container Ricotta cheese
    1 lb. box fettuccine
    1 1/2 tsp. salt
    1 1/2 c. milk
    grated Parmesan cheese
    fresh ground pepper
Preparation
    Cook fettuccine in boiling water.
    Drain and keep warm.
    Place frozen spinach in a pan of boiling water for 3 minutes, drain well and squeeze dry.
    Heat oil in frying pan over medium heat; add onion and saute until translucent.
    Add spinach and cook, stirring frequently.
    Add spinach mixture to fettuccine.
    Add Ricotta cheese, milk, salt and pepper.
    Cook over low heat, stirring lightly until well mixed.
    Transfer to a serving bowl and sprinkle with Parmesan cheese.
