Twice-Baked Squash - cooking recipe
Ingredients

4 medium acorn squash
2 1/2 c. chopped, cooked spinach or 2 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
2/3 c. grated Parmesan or Romano cheese
6 slices bacon, crisp-cooked, drained and crumbled
6 Tbsp. butter or margarine, softened
2 green onions, thinly sliced
1/4 tsp. salt
1/4 tsp. ground red pepper
1/4 c. soft bread crumbs
2 Tbsp. grated Parmesan or Romano cheese
Preparation

Line a large baking pan with foil. Halve squash lengthwise.
Remove seeds.
Place squash, cut side down, in pan.
Bake at 350\u00b0 for 30 minutes.
Turn cut side up. Bake, covered, 20 to 25 minutes or until nearly tender.
