Eggplant With Garlic Sauce(Szechuan Style) - cooking recipe
Ingredients

1 lb. eggplant
1 c. salad oil
1/4 lb. ground pork or poultry
2 tsp. minced ginger
2 tsp. minced garlic
3 Tbsp. soy sauce
2 tsp. sugar
2 tsp. vinegar
1 tsp. cornstarch
1 tsp. minced chili pepper (optional)
Preparation

In a small bowl, mix together the ginger, garlic, soy sauce, sugar, vinegar, cornstarch and chili pepper.
Set aside.
Heat oil in frying pan until hot.
Add eggplant and fry until soft.
Set aside and pat with paper towel to remove excess oil.
Pour out all but 1 teaspoon oil and fry meat until cooked.
Set meat aside and drain excess oil.
Heat ginger/garlic mixture in pan until near boiling.
Add eggplant and meat.
Mix together and cook 1 minute. Makes 6 servings.
