Stuffed Summer Squash - cooking recipe

Ingredients
    6 firm yellow crookneck squash
    1 onion, chopped
    6 Tbsp. cracker crumbs
    1/3 c. Cheddar cheese, grated
    1 tsp. salt
    1/4 tsp. pepper
    1 tsp. sugar
    1/4 c. mayonnaise
    1 egg, beaten
    1 Tbsp. oleo
Preparation
    Simmer squash in boiling salted water until tender for about 20 minutes.
    Slice in half lengthwise and scoop out insides, leaving shells intact.
    Drain and mash squash meat with remaining ingredients and stuff into squash shells.
    Sprinkle with additional cheese; bake at 350\u00b0 for 30 minutes.
    (Takes time, but worth the effort!)
