White Chili - cooking recipe

Ingredients
    1 lb. dried white beans (small)
    2 cans (4 oz. each) chopped green chilies
    1 cayenne pepper
    1/4 tsp. salt (to taste)
    3 garlic cloves, minced
    1 tsp. ground cinnamon
    1/4 tsp. pepper
    1 onion, minced (chopped)
    1 Tbsp. dried oregano
    4 c. cooked poultry, diced
    3 tsp. olive oil
    1 Tbsp. ground cumin
    9 c. chicken broth
    1 3/4 c. Monterey Jack cheese
Preparation
    Soak beans in cold water overnight.
    Cook beans until tender (3 to 4 hours) or in crock-pot.
    (If in crock-pot, start them in the morning and they will be ready when you return home from work.)
    When the beans are tender, drain.
