Shrimp Kabobs - cooking recipe

Ingredients
    2 lb. fresh shrimp
    1/2 c. lemon juice
    1/2 c. vegetable oil
    1/4 c. soy sauce
    3 Tbsp. chopped parsley
    2 Tbsp. chopped onion
    1/2 tsp. salt
    1/2 tsp. pepper
    1 clove minced garlic
    vegetable cooking spray
Preparation
    Peel shrimp and devein; set aside.
    Combine lemon juice and the next 7 ingredients in a dish; set aside.
    Arrange shrimp on 6-inch bamboo skewers that have been soaked in water.
    Place in lemon juice mixture, turning to coat.
    Refrigerate 2 or 3 hours. Place shrimp on rack sprayed with cooking spray into broiler pan. Broil 6 inches from heat with oven door partly open 3 to 4 minutes on each side, basting with the marinade.
    Serve hot or cold.
