Shrimp And Rice Salad - cooking recipe

Ingredients
    3 c. water
    1 lb. medium fresh shrimp (unpeeled)
    2 c. cooked white rice
    1/2 c. chopped celery
    1/2 c. chopped green pepper
    1/4 c. sliced pimento-stuffed olives
    1/4 c. chopped onion
    2 Tbsp. diced pimento
    3 Tbsp. oil-free Italian dressing
    2 Tbsp. reduced calorie mayonnaise
    2 Tbsp. prepared mustard
    1 Tbsp. lemon juice
    1 tsp. lemon pepper
    1/8 tsp. black pepper
Preparation
    Bring water to a boil.
    Add shrimp and cook 3 to 5 minutes or until shrimp turns pink.
    Drain and rinse with cold water.
    Chill. Peel and devein shrimp.
    Combine shrimp and next 6 ingredients in a medium bowl.
    Combine Italian dressing and next 5 ingredients, stirring until well blended.
    Pour over shrimp mixture and toss gently to coat.
    Cover and chill 3 to 4 hours.
