Creole Okra - cooking recipe

Ingredients
    3 slices bacon, diced
    1/2 c. chopped onion
    1/2 c. green pepper
    1 c. sliced okra
    1 fresh tomato, peeled and chopped
    1 c. uncooked instant rice
    2 c. chicken broth
    1 tsp. salt
    1/4 tsp. red pepper
Preparation
    Saute bacon until crisp.
    Drain off all fat except 2 tablespoons.
    Add onion, green pepper and okra.
    Cook until vegetables are tender-crisp.
    Stir in rice, broth, salt and red pepper.
    Bring to a boil.
    Reduce heat, cover and simmer 15 minutes.
    Add tomatoes and fluff lightly.
    Replace lid and let set about 15 minutes before serving.
    Yields 6 servings.
