Ingredients

2 c. cooked brown rice
1 c. crushed unsweetened pineapple
1/4 c. raisins
1 medium ripe banana
3/4 c. hot water
1/2 c. raw cashews (scant)
3 Tbsp. frozen orange juice concentrate
1 tsp. vanilla
1/2 tsp. almond flavoring
Preparation

Mix first 3 ingredients in 8 x 8-inch casserole dish.
Blend remaining ingredients until smooth and pour over rice and fruit. Bake at 350\u00b0 for 45 minutes and serve hot or make ahead by baking for 30 minutes and reheating just before serving.
Garnish with peaches or banana slices, if desired.
Yields 4 servings.
