7 Dry Bean Soup - cooking recipe

Ingredients
    2 c. mixed dried beans
    2 c. diced ham or sliced smoked sausage
    1 clove garlic, minced
    1 (28 oz.) can tomatoes
    1/2 Tbsp. salt
    2 qt. water
    1 large onion
    1 tsp. chili powder
    1 to 2 Tbsp. lemon juice
    salt and pepper
Preparation
    Use at least 7 varieties of beans (Great Northern, navy, black turtle, pinto, red, pink and kidney, yellow and green split peas). Rinse beans; place in large kettle and cover with water and soak overnight.
    Drain.
    Add 2 quarts water and ham or sausage.
    Simmer 3 hours.
    Add onion, garlic, chili powder, tomatoes and lemon juice.
    Simmer another 45 minutes.
    Add salt and pepper as desired. Yields 2 quarts.
