Cheesy Tuna Casserole - cooking recipe

2 Tbsp. safflower oil or butter
1/4 c. all-purpose flour
1 c. milk
1 1/2 c. salt-free chicken broth
1/2 lb. Cheddar cheese, grated
3 c. cooked bow tie noodles
1 (12 1/2 oz.) can tuna in water, drained
grated zest of 1 lemon
2 c. lightly cooked broccoli flowerets
1 c. cooked peas
1 carrot, peeled and minced or grated
bread crumbs (for the top)
chopped parsley (for the top)
Preparation

Preheat oven to 325\u00b0.
Heat the oil or butter in a medium saucepan.
Add the flour to the pan; stir until well blended.
Add the milk and chicken broth, whisking constantly to blend. Continue whisking as the sauce thickens and comes to a boil.
