Fresh Apple Cake - cooking recipe
Ingredients

1 1/2 c. Wesson oil
2 c. sugar
2 whole eggs
3 c. fresh apples, chopped
1 c. pecans, chopped (optional)
1/2 can flaked coconut (optional)
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
3 c. sifted flour
2 tsp. vanilla
Preparation

Mix oil and sugar. Add eggs and beat.
Add apples and mix well. Sift flour with soda, cinnamon and salt.
Add to the apple mixture.
Add vanilla, pecans and coconut.
Pour batter into a loaf pan. Bake at 300\u00b0 for 1 hour and 20 minutes. This is a nice Christmas cake; takes the place of fruit cake, not as rich.
