Country Lima Beans - cooking recipe
Ingredients

5 strips bacon
1 c. chopped onions
2 Tbsp. flour
2 cans baby lima beans
1 large can tomatoes (2 1/2 c.)
salt and pepper to taste
Preparation

Cut bacon into small pieces.
Fry until crisp.
Pour off all but 2 tablespoons fat.
Add onions and cook until soft.
Sprinkle with flour.
Stir to make roux.
Cut tomatoes into small pieces. Add to roux.
Stir.
Add lima beans.
Heat and serve.
The gravy can be made ahead of time.
Serves 8 generously.
