Ingredients

3 Tbsp. tapioca
1/4 c. sugar
1/8 tsp. salt
1 egg white
2 3/4 c. skim milk
3/4 tsp. vanilla
Preparation

Mix all ingredients, except vanilla.
Let stand 5 minutes. Bring to a full boil, stirring constantly.
Remove from heat. Stir in vanilla.
Serve warm or cold.
Recipe makes 5 (1/2-cup) servings, each with .5 g of fat.
