Sweet Potato Muffins - cooking recipe
Ingredients

2 1/4 c. whole wheat flour
3/4 tsp. cream of tartar
3/4 tsp. baking soda
1 3/4 tsp. cinnamon
1/2 tsp. ground allspice
1 ripe banana, mashed
1 (16 oz.) jar sweet potato baby food puree
3 egg whites, lightly beaten
1/2 c. evaporated skimmed milk
1/2 c. pure maple syrup
1 tsp. vanilla
3/4 c. chopped dates
Preparation

Preheat oven to 350\u00b0.
In medium bowl, combine flour, cream of tartar, baking soda, cinnamon and allspice; mix well.
Set aside. In separate bowl, combine banana, sweet potato puree, egg whites, evaporated milk, maple syrup and vanilla; stir into flour mixture. Stir in dates.
