Benedictives - cooking recipe

Ingredients
    12 oz. cream cheese (four 3 oz. pkg.)
    3 to 4 cucumbers, peeled and grated
    1/2 small onion, grated
    dash of salt
    mayonnaise (enough to make a smooth spread)
    1 or 2 drops green food coloring (to tint the very palest green)
    1 large loaf white bread, sliced and crust removed
    melted oleo or butter
    ground peanuts, ground very fine
Preparation
    With cream cheese at room temperature, add prepared cucumber, onion, salt and about 1/4 cup mayonnaise.
    Mix very well, adding more mayonnaise, if needed.
    Prepare bread; flatten each slice of bread with a rolling pin.
    Spread each slice with a moderate amount of filling.
    Roll up like a jellyroll.
    Roll each in melted oleo, then in ground peanuts.
    Makes 2 to 3 dozen.
