Chicken Massimino - cooking recipe

Ingredients
    1 cut up chicken
    1/4 c. olive oil
    1/4 c. balsamic or red wine vinegar
    1 large onion, chopped
    2 to 3 cloves garlic, crushed
    1 tsp. oregano
    1 tsp. basil
    salt and pepper to taste
Preparation
    Heat oven to 350\u00b0.
    Remove skin from chicken, if desired. Arrange in a baking dish and place in oven.
    Combine remaining ingredients in a bowl. Add about 1 1/2 to 2 cups of hot water to mixture.
    Let stand while chicken cooks, stirring once or twice to combine flavors.
    After 1 hour pour mixture over chicken and continue cooking for 15 minutes.
    Put chicken on platter and serve sauce in a bowl.
