Betty Lou'S Potato Salad - cooking recipe

Ingredients
    5 lb. potatoes
    4 large hard-boiled eggs, chopped
    1 large onion, chopped small
    1/2 lb. lean bacon
    1 Tbsp. drippings
    1 c. Hellmann's mayonnaise (more if desired)
    salt and pepper
Preparation
    Boil potatoes with the skins on.
    Cool before peeling.
    Boil eggs.
    Chop bacon small; brown until crisp, reserving 1 tablespoon of drippings.
    Drain on paper towel.
    In a large mixing bowl, cut potatoes into bite size pieces.
    Add eggs, onion, bacon and at least 1 cup of mayonnaise (more may be added to reach desired consistency).
    Salt and pepper to taste.
