Cornbread - cooking recipe

2 Tbsp. shortening
1/4 c. sugar
1 egg yolk, beaten
3/4 c. cornmeal
3/4 c. flour
1/2 tsp. soda
2 tsp. baking powder
3/4 tsp. salt
3/4 c. sour milk
1 egg white
Preparation

Preheat oven to 425\u00b0.
Using a No. 9 cast-iron skillet, melt 1 tablespoon shortening as oven heats.
Cream remaining 1 tablespoon shortening; add sugar.
Cream until light and fluffy.
Add beaten egg yolk.
Sift cornmeal, flour, soda, baking powder and salt together and add to egg mixture alternately with sour milk.
Last fold in egg white beaten stiff.
Turn into hot cast-iron skillet and bake for 20 minutes, or until inserted toothpick comes out clean.
