Light 'N' Lean Meat Loaf - cooking recipe

Ingredients
    1 1/2 c. diced carrots
    1 1/2 c. diced onions
    1 c. diced sweet pepper
    12 oz. lean ground beef
    1 lb. ground turkey
    1 1/2 c. rolled oats
    2 c. cooked rice
    1 1/2 c. tomato juice
    1 1/2 c. fat-free egg substitute
    1 tsp. oregano
    1 tsp. thyme
    1/2 tsp. hot pepper sauce
    1/2 tsp. black pepper
    1/4 c. ketchup
    1/2 c. water
Preparation
    Coat a large nonstick frying pan with vegetable cooking spray. Add the carrots, onions and pepper.
    Saute for 5 to 10 minutes. Crumble the ground beef and turkey into a large bowl.
    Lightly toss with the cooked vegetables, oats and rice.
    In a small bowl, combine the tomato juice, eggs, oregano, thyme, pepper sauce and black pepper.
    Add to the meat mix.
