Began Bharta(North Indian Eggplant Dish) - cooking recipe

Ingredients
    2 large eggplants
    2 large onions, chopped
    2 large tomatoes, finely chopped or thinly sliced
    1 small piece ginger root, chopped or grated
    1 large garlic
    4 Tbsp. corn or olive oil
    1/4 tsp. cumin seed
    1 tsp. coriander powder
    1/2 tsp. salt or to taste
    freshly ground black pepper to taste
    1 Tbsp. cilantro, chopped
Preparation
    Preheat oven to 400\u00b0.
    Rinse eggplant dry; slice in half lengthwise.
    Place halves on foil covered oven rack.
    Roast for 40 to 50 minutes.
    When the eggplant is done the outside skin will appear charred.
    Set aside to cool, then scoop out the flesh from the charred shell.
