Seafood Gumbo - cooking recipe
Ingredients

2 lb. okra
1 lb. medium shrimp, shelled and deveined
1 lb. well-picked crabmeat
1 qt. raw oysters
3 slices bacon
1 1/2 qt. chicken stock or water
2 large tomatoes, peeled and chopped
3 medium onions, chopped fine
1 1/2 tsp. cayenne
1 tsp. salt
1 1/2 tsp. black pepper
Preparation

Wipe okra with a damp towel.
Do not wash it, or it will make the okra too moist.
Cut off the stems and discard.
Slice the okra into thin rounds.
Meanwhile, cook three slices of bacon in a large pot to render the fat.
Remove the bacon and reserve for another use.
Add the okra rounds to the fat and cover.
Cook on a low fire for about 1 1/2 hours, stirring frequently.
Add tomato, onion, bell pepper and garlic.
Cook, covered, stirring frequently, for about 30 minutes, until vegetables have wilted and the okra has lost its slime.
Add stock and bring to a boil.
Cover and simmer about two hours.
