Sweet Potato Croquettes - cooking recipe

Ingredients
    2 c. hot, mashed sweet potatoes
    2 Tbsp. fat
    1/8 tsp. pepper
    1 tsp. sugar
    2 eggs
    1/2 c. fine bread crumbs
    2 Tbsp. water
Preparation
    Mix sweet potatoes with fat, salt, pepper, sugar and 1 well beaten egg.
    Beat well.
    If mixture is too stiff, add a little hot milk.
    Shape into croquettes.
    Roll in crumbs; dip in beaten egg, diluted with water, and roll again in crumbs.
    Fry in deep fat at 375\u00b0 until golden brown and drain on unglazed paper.
    Serves 6.
