Yankee Pot Roast - cooking recipe
Ingredients

1/8 lb. salt pork (diced)
4 lb. chuck roast
1 bay leaf
2 cloves garlic
2 tsp. whole thyme leaves
1/2 c. chopped parsley
6 carrots
6 medium onions (yellow)
1 turnip (1/2-inch diced slices)
6 potatoes
4 Tbsp. butter
4 Tbsp. flour
2 c. water
Preparation

Heat a large Dutch oven and brown salt pork - leave fat in the pan.
Salt and pepper roast and brown in fat - both sides (do not puncture meat).
Add 2 cups of water, bay leaf, garlic, thyme and parsley.
Cover - simmer slowly 2 hours - Keep at least 1 cup of water.
Add carrots, onion and turnip.
Cover and cook 1/2 hr. Then add potatoes and cook until potatoes are done.
Watch water (don't let pan get dry).
Take out meat and vegetables.
Add small amount of water if needed.
For roux melt butter, add flour in the pan and mix to desired thickness for gravy.
