Bran Muffins - cooking recipe

Ingredients
    3 c. bran cereal
    1 1/2 c. sugar
    1/2 c. salad oil
    2 large eggs
    2 c. buttermilk or make your own with vinegar in milk
    1/2 tsp. salt
    2 1/2 c. flour
    2 1/2 tsp. baking soda
    1 c. chopped nuts (optional)
Preparation
    In medium bowl, pour 1 cup boiling water over 1 1/2 cups cereal.
    Cool; set aside.
    Blend sugar, oil, eggs and buttermilk. Stir in rest of dry cereal and warm cereal.
    Bake in baking cups at 375\u00b0 for 35 minutes.
    Makes 2 1/2 dozen.
