Quail And Hazelnut Sauce - cooking recipe

Ingredients
    1/4 c. hazelnuts
    4 quail
    1/4 c. light molasses
    2 oz. butter
    8 oz. unsalted butter, softened
    2 c. chicken stock
    salt and pepper
Preparation
    Grind hazelnuts in blender.
    In processor, blend molasses and butter.
    Chill for 1 hour.
    Season and tie quail to hold in shape. Saute quail in 2 ounces of butter.
    Start with breast side down, turning to brown all sides.
    Finish in oven for 5 minutes at 450\u00b0. Remove quail; drain and add hazelnut butter to thicken.
    Season with salt and pepper.
