Grandma Walker'S Carrot Pudding - cooking recipe

Ingredients
    2 lb. carrots, peeled and sliced into 1/4-inch discs
    1 lb. yellow cheese (Colby, mild Cheddar or Velveeta)
    1/4 lb. crackers, crushed (saltine or Wheat Thins)
    1 small onion, diced
    1 stick butter
Preparation
    Boil carrots until tender.
    Drain.
    Mix with butter (mash with electric mixer or use potato masher).
    Add diced onion.
    Mix. Add 2/3 of the cheese.
    Mix. Add 3/4 of the crackers.
    Mix. Pour into casserole dish and top with remaining crackers and cheese.
    Bake at 350\u00b0 until golden brown and bubbly around edges (about 45 minutes).
