Broccoli And Cheese Casserole - cooking recipe

Ingredients
    1 large bunch broccoli, thickest parts of stems removed
    2 c. Monterey Jack cheese, grated
    1/2 c. sharp Cheddar cheese, grated
    1/2 c. small curd cottage cheese
    1 medium onion, chopped
    1 Tbsp. fresh parsley, minced (optional)
    3 eggs
    1 pt. light cream
    salt and pepper to taste
Preparation
    Cut the broccoli into uniform 2 to 3-inch pieces.
    Steam until just beginning to become tender, but not cooked through.
    Remove from heat; allow to cool and chop into bite size pieces.
    Beat together the cream and eggs.
    Add the cheeses, onion, parsley, salt and pepper.
    Gently fold in the broccoli.
    Pour the mixture into a buttered, shallow baking dish and bake at 350\u00b0 for 20 to 30 minutes or until bubbly and browned on top.
    This is better if made up the day before baking and serving.
