Zucchini Bread - cooking recipe

Ingredients
    3 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1 Tbsp. cinnamon
    3 eggs
    2 c. sugar
    2 tsp. vanilla
    2 c. shredded zucchini
    1 c. chopped pecans
Preparation
    Combine first 5 ingredients and put aside.
    Combine eggs, sugar, oil and vanilla in large bowl.
    Beat until well blended. Stir in zucchini and pecans.
    Add dry ingredients, mixing until just moistened.
    Spoon batter into loaf pans or 1 pound coffee cans.
    Bake at 350\u00b0 for 55 to 60 minutes or until wooden toothpick comes out clean.
    Cool 10 minutes and remove to wire rack to cool completely.
    Serve with whipped cream cheese and pecans, if desired.
