Crab Omelet(Egg Fu Yung) - cooking recipe

Ingredients
    7 eggs
    1 c. flaked crab meat
    1 Tbsp. soy sauce
    1 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. cornstarch
    4 Tbsp. oil
    1 c. shredded bamboo shoot
    1/2 c. shredded onion
    1/2 c. shredded celery
    1/2 c. finely chopped water chestnuts
Preparation
    Break eggs into a large bowl.
    Add crab meat, soy sauce, salt, pepper and cornstarch.
    Mix all ingredients well.
    Heat wok.
    Add 2 tablespoons oil.
    Stir-fry bamboo shoots and water chestnuts for 30 seconds.
    Add onion and celery for 1 1/2 minutes.
    Remove from wok and put aside to cool.
    Mix eggs.
    Add crabmeat mixture to vegetables.
    Mix well.
    Reheat wok and add 2 tablespoons oil of mixture (2 tablespoons each).
    Add oil if necessary.
