Sweet Potato Supreme - cooking recipe
Ingredients

3 lb. fresh raw sweet potatoes
3/4 c. softened butter
1 c. light brown sugar
1 tsp. cinnamon
1/2 ground cloves or allspice
1 Tbsp. grated orange rind
6 oz. frozen orange juice concentrate
1/2 c. chopped pecans
1 1/2 c. miniature marshmallows
Preparation

Boil sweet potatoes for about 35 minutes or until soft, cool, peel and slice for casserole.
Cream together butter, sugar, cinnamon, cloves, orange rind and orange concentrate (the juice should be partially thawed).
Arrange layers of sweet potato (half) in casserole; cover with 1/2 sugar-butter mixture.
Add the remaining potatoes, top with all butter-sugar mixture.
Place in heated oven at 350\u00b0 until heated through; remove and sprinkle with chopped pecans and cover with marshmallows; return to oven and brown lightly.
Watch closely as marshmallows burn quickly.
