Chicken Veronique - cooking recipe
Ingredients

3 chicken breasts (remove skin and bones)
3/4 tsp. salt
1/4 tsp. pepper
1/2 c. orange marmalade (Smucker's low sugar)
1 Tbsp. lemon juice
1 Tbsp. cornstarch
1/2 tsp. dry mustard
1 (11 oz.) can mandarin oranges, drained
1 c. seedless grapes
Preparation

Salt and pepper chicken.
In large skillet, melt butter and brown chicken on both sides (about 10 minutes).
In a small bowl, combine marmalade, lemon juice, cornstarch and dry mustard.
Fold in mandarin oranges.
Carefully fold in grapes.
Pour sauce over chicken and simmer, covered, 15 minutes or until chicken is very tender.
