Deer Bologna - cooking recipe
Ingredients

10 lbs. sausage (hamburger can also be used)
20 lbs. deer meat
1 lb. Morton tenderizer
3 oz. black pepper
3 small cans sage (one is all that is really needed)
1/3 cup fresh garlic, chopped
Beef casings
Preparation

Grind meat 3 times. Mix all ingredients together and place into casings. Smoke until it turns orange, cook in water until almost boiling, smoke again about 2 hours.
