Iowa Whoopie Pies - cooking recipe

Ingredients
    1/2 c. shortening
    2 c. all-purpose flour
    1 1/4 c. buttermilk or sour milk
    1 c. sugar
    2/3 c. unsweetened cocoa powder
    1 egg
    Chocolate Butter Frosting
    3/4 c. milk
    1 tsp. baking soda
    1/4 c. all-purpose flour
    3/4 c. margarine
    2 c. sifted powdered sugar
    1 tsp. vanilla
    1 tsp. vanilla (filling)
Preparation
    For cookies, beat shortening with an electric mixer on medium speed for 30 seconds.
    Add about 1 cup flour, half the buttermilk, sugar, egg, baking soda, 1 teaspoon vanilla and 1/8 teaspoon salt. Beat until thoroughly combined.
    Beat in remaining 1 cup flour and remaining buttermilk.
    Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet.
    Bake at 350\u00b0 for 8 to 10 minutes or until edges are firm.
    Cool.
